Evaluating the Effectiveness of Low Pressure Carbon Dioxide as a Hurdle in Raw Milk Storage

Aims: To evaluate the effectiveness of low pressure carbon dioxide as a hurdle in raw milk storage.
 Study Design: Milk samples were stored at under 29°C for 6 hours and microbial quality was compared with control milk.
 Place Duration Study: Department Dairy Microbiology, Verghese Kurien Institute Food Technology (VKIDFT), Kerala Veterinary Animal Sciences University, Mannuthy between January 2020 December 2020.
 Methodology: collected from an organized farm. The initial determined carbonated to 20 psi six 29°C, uncarbonated sample kept acted control. after storage terms total viable count, coliform count gram negative organism count.
 Results: Significant growth suppression (P=0.05) bacteria observed milk. Total Viable showed 1.05 log cfu/ml while coliforms 1.3 cfu/ml. greatest reduction organisms difference 2.2 psychrotrophic 1.54 cfu/ml.
 Conclusion: Carbon found be effective bacteriostatic agent which could used extending keeping action due anaerobic conditions developed by also increased acidity medium.
